Belle Fleur
Individual portions:
1.5 oz Vodka
.5 oz Pear Brandy
.5 oz Lemon Juice
.5 oz simple syrup
.25 oz Green Chartreuse
.5 oz Prosecco
Combine ingredients, except for the Prosecco, in a shaker, add ice and shake well to chill. Strain into a punch cup/coup glass. Top w/ Prosecco.
For batching the punch:
Combine the peels of 6 lemons with 12 oz white sugar. Muddle well and let macerate for 1 hour. After an hour, remove the peels and add:
24 oz Vodka
8 oz Pear Brandy
4 oz Green Chartreuse
Whisk together well. Add 12 oz cold tap water, then add large ice cubes and stir well to chill. Add Prosecco to taste. The punch will start strong and slowly dilute as it sits. Slice lemon wheels and add to the bowl. Ladle into individual cups of your liking. Yields: 12-16 portions.
